Bartscher's Dry Age aging cabinet is designed for the preservation and aging of beef, pork, game meat, etc... in optimal conditions of humidity and temperature.
Depending on the meat used and after a certain time of maturation, different aromas can be reached: a subtle nutty aroma after approximately 21 days of maturation, a smell of mushrooms after approximately 28-35 days, and finally after approximately 45 days and more, a strong odor reminiscent of blue cheese. The longer the meat is matured, the stronger its aroma.
